Do-Ho had two super important deadlines this week: Tax Day, and the Grilled Cheese Pageant. Which do you think was more fun? (Hint: The less-fun deadline involved a lot of math and a check to Uncle Sam.)
The Grilled Cheese Pageant is kind of unique in that the contestants are basically sandwiches. I say "basically" because as you know, most of the best foods come from the donut family. Hence, Do-Ho's original entry in the pageant was Spectacular Jelly Doughnut Grilled Cheese Sandwiches. Let's face it--anytime you see "jelly doughnut" nestled in a sentence you know someone's gonna end up happy.
Spectacular Jelly Doughnut Grilled Cheese Sandwiches (inventor: Do-Ho)
1 loaf sweet Hawaiian bread
1 Philadelphia cream cheese brick, cut into slices
1 jar raspberry preserves
Powdered sugar
Spread a thick goopy layer of raspberry preserves on one piece of bread. Lay down some slices of cream cheese on top of the preserves until the surface is covered. Top with second piece of bread. Take out another piece of bread, and keep going until you have made a sandwich for everyone in your house. Cook sandwiches in a panini press or grill them in the toaster oven until slightly browned. Sprinkle powdered sugar on top.
Well I don't know if we'll bring home the tiara, but it sure was fun participating! Thanks to Panini Kathy (http://www.paninihappy.com/) for holding the pageant. We've already got an idea for next year!

I would defend my country's boundless creativity from Latvian verbal attacks, but I'm not sure. Could be fantastic, or could taste like a jelly twinkie. Any taste testers out there? "H" from "VA"
